Fresh ginger is a very popular flavour in cooking and is also used regularly as a herbal tonic. The root of the plant is best harvested in winter, however eight months after good growth, side shoots can be taken with care. Ginger prefers a warm climate, but in cooler regions the plant can be treated as an annual, and planted in spring in a frost-free area or lifted each year.
